From the 15th century to the beginning of the 20th century, Chagatai Turkish was the spoken and written language of Eastern Turkic. Chagatai Turkish became a classical literature, particularly in the second half of the 15th century with the works developed by Ali Şir Nevayı·¯, and interest in Chagatai grew throughout the Turkish Islamic world. This resulted in a number of Chagatai dictionaries. In addition, Babur's establishment of the Babur Empire in the region from his homeland to today's India, Pakistan, Bangladesh, Afghanistan and Iran caused the Baburid dynasty, palace bureaucracy and military officials to live away from their native languages. As a result, many dictionaries and grammars were written to teach Turkish in and around India. Kitchen expressions in Chagatai dictionaries were determined in this study. In this study, Mu?addimetü’l-Edeb, Mu?akemetü’l-Lugateyn, El-Lugatu ?n-Neva?iyye ve ?l-İstişhadatu ?l-Cagata?iyye, Nisab-ı Türkı·¯, Ne?r-?Alı·¯’s Chagatai Turkish Dictionary, Feragı·¯’s Chagatai Turkish Dictionary, Bedayiü?l-Lugat, Fazlullah ?an Lugatı, Zeban-ı Türkı·¯ (Kelür-name), Nisab-ı ?utbiyye, ?ula?a-yi ?Abbası·¯, Fet?-?Alı·¯ ?acar Lugatı, Lugat-ı Çagatay ve Türkı·¯-yi Os?manı·¯ ve Üss-i Lisan-ı Türkı·¯ were used as a source. Firstly, general information about Chagatai dictionaries is given. Then, the lexical units related to the identified kitchen expressions are classified as "kitchen tools", "cereals", "fruits", "vegetables and herbs", "spices", "oils", "food and beverages".
